Street-Style Fish Tacos
Flaky white fish seasoned and topped with a cool, tangy slaw will take your taco night to the next level.

Remove the fish from the package and pat dry with paper towels to remove excess moisture.

In a medium bowl, whisk together the olive oil (or vegetable oil), lemon juice, white vinegar, coriander, and taco seasoning until well blended.

Add the fish to the marinade and gently stir to coat evenly.

Pour the fish and marinade into a large frying pan.

Cook over medium-high heat for 4–5 minutes, or until the fish flakes easily with a fork.

Remove the fish from the heat.

Flake the fish into small pieces using a fork.

Drain the canned diced tomatoes (if using).

Fill the warmed corn tortillas with the fish mixture.

Top with the shredded red cabbage, shredded green cabbage, diced tomatoes, and Greek yogurt (or low-fat sour cream).
