  1. Preheat the oven to 425°F.
  2. Peel and chop the sweet potato into bite-sized pieces.
  3. Toss the sweet potato with the melted coconut oil, chili powder, salt, and pepper.
  4. Roast for 20–25 minutes, stirring halfway through, until tender.
  5. While the sweet potato roasts, rinse and drain the black beans.
  6. Add the black beans and cooked quinoa to a large bowl and set aside.
  7. In a blender, combine the avocado, cashews, cilantro, water, lime juice, chili powder, optional cayenne pepper, salt, and pepper.
  8. Blend until smooth and creamy, starting with less water and adding more as needed to reach a drizzly consistency.
  9. Let the roasted sweet potatoes cool for about 5 minutes.
  10. Add the roasted sweet potatoes to the quinoa and black bean mixture.
  11. Squeeze the juice of 1 lime over the salad and stir to combine.
  12. Divide the lettuce or greens among 4 serving bowls.
  13. Top with the sweet potato and quinoa mixture.
  14. Drizzle with the cilantro-avocado dressing.
  15. Serve as is or toss everything together before serving.
