Spicy Beef Stir Fry

  1. In a large bowl, combine the beef, minced ginger, 2 minced garlic cloves, black pepper, and 0.5 teaspoon salt.
  2. Toss to coat and let stand for 15 minutes.
  3. In a small bowl, whisk together the coconut milk, sugar, Sriracha chili sauce, lime zest, lime juice, and the remaining 0.25 teaspoon salt until well blended.
  4. Heat 1 tablespoon of canola oil in a large skillet over medium-high heat.
  5. Add the beef and stir-fry for 2–3 minutes, or until no longer pink.
  6. Remove the beef from the skillet and set aside.
  7. Heat the remaining 1 tablespoon of canola oil in the same skillet.
  8. Add the red bell pepper, red onion, jalapeño, and the remaining garlic clove.
  9. Stir-fry for 2–3 minutes, until the vegetables are crisp-tender.
  10. Stir in the coconut milk mixture and heat through.
  11. Add the spinach and cooked beef to the skillet.
  12. Cook, stirring occasionally, until the spinach is wilted and the beef is heated through.
  13. Sprinkle with the sliced green onions and chopped cilantro before serving.
