Savory Penne with Lentils and Kale

A nourishing vegan meal is made in one skillet for a quick weeknight supper.

Ingredients

Instructions

  1. Rinse the brown lentils in a fine-mesh strainer and remove any debris.
  2. Heat the olive oil in a large nonstick skillet over medium heat for 1 minute.
  3. Add the chopped onion and cook for 4 minutes, stirring occasionally.
  4. Add the minced garlic and cook for 1 minute, stirring constantly.
  5. Add the lentils, whole-wheat penne, crushed tomatoes, 2.5 cups (600 milliliters) water, salt, black pepper, oregano, and basil.
  6. Stir well to combine.
  7. Cover with a lid, reduce the heat to low, and cook for 18 minutes.
  8. Remove the lid and place the frozen kale on top of the mixture.
  9. Replace the lid and cook for an additional 4 minutes, or until the lentils are tender.
  10. Divide among serving bowls.
  11. Top evenly with the chopped walnuts and fresh parsley before serving.
