  1. Preheat the oven to 425°F.
  2. In a food processor, blender, or small bowl, combine the prepared horseradish, mustard, kosher salt, and black pepper until smooth.
  3. Stir in the minced garlic, minced shallot, dried thyme, and olive oil to create the seasoning rub.
  4. Spray a roasting pan with vegetable oil cooking spray.
  5. Place the trimmed beef tenderloin (with the small end tucked under) and the quartered red onions into the prepared roasting pan.
  6. Spread or pat the horseradish seasoning rub evenly over the beef tenderloin.
  7. Cover and roast for 20 minutes.
  8. Baste the tenderloin with the pan juices.
  9. Continue roasting uncovered for an additional 10–20 minutes, or until the desired level of doneness is reached.
  10. Cut the tenderloin in half vertically.
  11. Insert a meat thermometer into the center of the thickest portion.
  12. Cook to a minimum internal temperature of 145°F. For medium-well, cook to 160°F. For well-done, cook to 170°F.
  13. Let the meat rest for at least 3 minutes before carving and serving.
