Roasted Ratatouille

Preheat the oven to 425°F.

Rinse and peel the onion. Peel the garlic. Rinse the eggplant, zucchini, yellow squash, and tomato.

Dice the onion and eggplant into 0.5-inch pieces.

Slice the zucchini and yellow squash into 0.5-inch slices.

Slice the tomato into 0.5-inch slices using a see-saw cut method.

Mince the garlic.

In a medium bowl, combine the onion, eggplant, zucchini, yellow squash, garlic, canola oil, dried basil, dried oregano, salt, and black pepper.

Toss until the vegetables are evenly coated.

Coat a baking sheet with nonstick cooking spray.

Arrange the onion, eggplant, zucchini, and yellow squash on the baking sheet in an alternating color pattern in a single layer, leaving out the tomatoes.

Bake for 20 minutes.

Remove the baking sheet from the oven and add the tomato slices.

Return to the oven and bake for an additional 15–20 minutes, stirring occasionally, until the vegetables are tender and lightly browned.

Serve warm.
