Tuscan Soup
Made with savory sausage and white beans from the pantry, this soup is hearty enough to work as a main course.

Add the ground sweet Italian sausage and dried fennel to a large soup pot.

Cook over medium heat for 8–10 minutes, stirring occasionally and breaking the sausage into small pieces as it browns.

If the sausage begins to stick, add a small amount of oil.

Add the tomato paste, diced onion, and garlic to the pot.

Cook, stirring occasionally, until the onion is softened and the browned bits on the bottom of the pot are loosened.

Drain and rinse the white beans.

Add the beans, paprika, chicken broth, water, and low-fat milk to the pot.

Cover and bring the soup to a simmer over medium heat.

Add the sliced red potatoes and chopped kale.

Stir until the kale begins to wilt.

Cover and simmer for about 15 minutes, or until the potatoes are tender.

Season to taste with the optional red pepper flakes, black pepper, and salt.

Serve warm.
