Blueberry Barbecued Chicken
Combine two classic summer favorites — blueberries and barbecue — in this tangy and sweet sauce for grilled chicken.

Heat a medium saucepan over medium-high heat.

Add the olive oil and sauté the diced onion for about 2 minutes, or until translucent.

Stir in the blueberries, ketchup, balsamic vinegar, brown sugar, and salt.

Bring the mixture to a simmer and cook for 4 minutes, stirring occasionally.

Blend the sauce until smooth using a blender.

Transfer 0.50 cup of the sauce to a separate bowl and reserve for serving.

Place the remaining sauce into another bowl for cooking the chicken.

Pound the chicken breasts to an even thickness of about 0.50 inch.

Place the chicken on a prepared grill and cook for 5 minutes on one side.

Flip the chicken and cook for another 5 minutes.

Brush one side of the chicken with the cooking sauce and cook for 1 minute.

Turn the chicken over, brush the other side with the remaining cooking sauce, and cook for 1 additional minute.

Continue cooking until the internal temperature reaches 165°F (74°C).

Serve with the reserved blueberry barbecue sauce.
