Black Bean Sliders
These mini vegetarian black bean patties are perfect slipped into slider buns or on their own dipped in ketchup.

Sauté the carrots and red onion.

Add the juice of 1 lime, 1 teaspoon cumin, and 1 teaspoon coriander to the vegetables and stir to combine.

Place 1.5 cups of the black beans into a large bowl and mash well with a fork or potato masher.

Add the remaining black beans, the sautéed vegetables, breadcrumbs, beaten egg, chili powder, salt, and pepper to the mashed beans.

Mix all ingredients thoroughly until well combined.

Scoop about 0.25 cup of the mixture at a time and form into patties.

Repeat until all patties are formed.

Heat a nonstick skillet over medium heat.

Lightly coat the skillet with cooking spray or add 1 teaspoon of oil.

Cook the patties in batches for 2–3 minutes per side, or until browned on both sides.

Remove from the skillet.

Serve as is, or on slider buns with toppings such as onions, lettuce, or tomatoes.
