Asian-Style Beef Burritos

  1. Mince garlic, peel and grate ginger root, crack and beat eggs, separate egg whites, chop green onions, de-seed and slice chile pepper, and chop cilantro. Measure all other ingredients and set aside.
  2. Heat 1 tablespoon oil in a 12-inch nonstick skillet over medium heat.
  3. Add the onion, garlic, and ginger root; cook and stir for 4 to 5 minutes, until onion is soft and translucent.
  4. Add beef, curry powder, salt, and black pepper. Cook and stir for about 5 minutes until the meat is browned and cooked through. Using a hard spatula, crush the ground beef into very small granular sizes as it browns.
  5. Remove from heat and cool slightly.
  6. Add eggs, egg whites, green onions, chile pepper, and cilantro; blend well.
  7. To assemble each burrito, place one tortilla on a flat surface. Place about 0.5 cup of the beef mixture in the center of the tortilla, spreading the mixture into a 4.5-by-4.5-inch square.
  8. Fold the tortilla into a package by folding the top, bottom, and sides to enclose the beef filling.
  9. Heat the remaining 2 tablespoons oil over medium heat in the nonstick skillet. Carefully place each burrito in the skillet; cook for 5 minutes on each side until the filling is cooked through and the outside is golden brown.
  10. Cook in batches as needed depending on the size of the skillet. Alternatively, bake in the oven or cook on a stovetop grill or griddle.
