Black Bean–Quinoa Bowl
This black bean and quinoa bowl has many of the usual hallmarks of a taco salad, minus the fried bowl. It’s loaded with pico de gallo, fresh cilantro, and avocado, plus an easy hummus dressing to drizzle on top.

Combine the black beans, cooked quinoa, and diced avocado in a bowl.

In a separate small bowl, combine the hummus and lime juice.

Add water, if desired, to thin the hummus dressing to your preferred consistency.

Drizzle the hummus dressing over the black bean, quinoa, and avocado mixture.

Top with the pico de gallo.

Sprinkle the chopped fresh cilantro over the top.
