Jerk Chicken Kebabs

This recipe with Caribbean spice is easy and nutritious. Add black beans and whole grain brown rice to make the meal complete.

  1. Place the skewers in a 9 × 13-inch dish and cover with water to prevent them from burning during cooking.
  2. In a food processor, combine the brown sugar, orange juice, olive oil, soy sauce, thyme, allspice, cinnamon, nutmeg, garlic, fresh ginger, lime juice, lime zest, and black pepper.
  3. Blend until smooth.
  4. Cut the chicken into small pieces.
  5. Pour the marinade into a food-safe container or resealable plastic bag.
  6. Add the chicken and coat evenly with the marinade.
  7. Marinate the chicken in the refrigerator for at least 1–2 hours. Do not marinate at room temperature.
  8. Wash the red onion, lime, and pineapple.
  9. Quarter the red onion and cut the pineapple into 1-inch chunks.
  10. Using a separate cutting board for raw chicken and produce, thread the chicken, onion, and pineapple onto the soaked skewers, alternating ingredients.
  11. Preheat the grill to medium-high heat.
  12. Grill the kebabs for 5 minutes on one side.
  13. Flip and continue grilling until the chicken is fully cooked.
  14. Verify the chicken reaches an internal temperature of 165°F before serving.
