Hearty Hominy Stew
This flavorful twist on the Argentine stew locro comes together in one pot. Canned hominy is used as a quick alternative to the dry version traditionally used.

Heat the olive oil in a large pot over medium-high heat.

Add the beef chuck and brown on all sides, about 3–4 minutes.

Remove the beef from the pot and set aside.

Add the bacon and chorizo to the pot and cook for 3–4 minutes.

Add the onions and garlic and sauté for 3–4 minutes.

Stir in the cumin, paprika, nutmeg, and bay leaves. Cook for 1–2 minutes.

Add the butternut squash and sweet potatoes and sauté for 3–4 minutes.

Return the beef to the pot.

Add the diced tomatoes and water.

Stir, bring to a boil, then reduce the heat and simmer for 50 minutes.

Add the frozen corn and continue cooking for 10 minutes.

Remove and discard the bay leaves.

Using the back of a wide spoon, press the vegetables and tomatoes against the sides of the pot while stirring to help thicken the stew.

Continue stirring until the liquid thickens, about 3–4 minutes.

Place the hominy in a microwave-safe bowl and heat on high for 3–4 minutes.

Drain the heated hominy and stir it into the stew.

Heat for an additional 10 minutes.

Serve hot.
