Healthier Shepherd’s Pie

  1. Preheat the oven to 375°F.
  2. Lightly grease a 9 × 13-inch baking dish with oil or nonstick cooking spray.
  3. Place a large Dutch oven or nonstick skillet over medium-high heat.
  4. Add the ground beef, shredded carrots, garlic powder, and onion powder.
  5. Cook for about 5 minutes, breaking up the meat until it is no longer pink and the carrots are tender.
  6. Drain any excess fat from the skillet.
  7. Stir in the pinto beans, tomato soup, shredded Cheddar cheese, and corn.
  8. Simmer for 2–3 minutes, until heated through.
  9. Season with kosher salt and freshly ground black pepper to taste.
  10. Spread the meat mixture evenly into the prepared baking dish.
  11. Evenly spread the mashed potatoes over the meat mixture.
  12. Sprinkle the grated Parmesan cheese over the mashed potatoes.
  13. Bake for about 15 minutes, or until the filling begins to bubble and the potatoes are heated through.
  14. Switch the oven to broil and broil for 2–4 minutes, until the top is golden brown.
  15. Remove from the oven and let cool slightly before serving.
