  1. Slice the pork tenderloin into 4 equal pieces.
  2. Season each piece with the salt-free lemon pepper.
  3. Coat a large nonstick skillet with vegetable cooking spray and heat over medium-high heat.

  5. Cook for 4 minutes on each side.
  6. Check the internal temperature at the thickest part of the pork. Cook until it reaches 145°F (the meat may still be slightly pink).
  7. Add the spring onion jelly (or apricot preserves or orange marmalade) and mirin to the skillet.
  8. Stir for about 1 minute to create a glaze.
  9. Spoon the glaze over the pork and serve.
