Napa Valley Glazed Salmon and White Beans

Elegant, gourmet and delicious, this salmon recipe is ready in less than 30 minutes. Serve with grilled leeks over white beans seasoned with vinegar, honey and fresh thyme, or atop gently steamed baby spinach—both are Napa Valley trendy.

  1. Preheat the oven to 350°F.
  2. In a small bowl, combine 2 tablespoons honey, 1 teaspoon dried thyme, 2 teaspoons Dijon mustard, lemon zest, and white pepper.
  3. Line a shallow roasting pan with foil and arrange the salmon fillets skin-side down.
  4. Spread the honey mixture evenly over the tops of the salmon fillets using the back of a spoon.
  5. Bake uncovered for 20 minutes, or until the salmon reaches an internal temperature of 145°F and flakes easily with a fork.
  6. In a separate bowl, combine the white beans, remaining 2 tablespoons honey, remaining 1 teaspoon dried thyme, lemon juice, and apple cider vinegar.
  7. Mix well until the beans are evenly coated.
  8. Serve the glazed salmon over or alongside the white bean mixture.
