Noodles and Veggie Stir-Fry

If you like spaghetti, chances are, you'll love buckwheat soba noodles. This delicious stir-fry recipe is as bright and colorful as it is nutritious!   1. Cook the buckwheat soba noodles according to the package directions.
  2. Drain the noodles and set aside.
  3. Heat a medium saucepan over medium-high heat.
  4. Add the canola oil and sauté the minced garlic for 2–3 minutes.
  5. Add the red and orange (or yellow) bell peppers and cook until softened.
  6. Add the zucchini and cook for a few more minutes.
  7. Stir in the spinach and chives and cook for 3–4 minutes.
  8. Add the low-sodium soy sauce, sesame oil, and sesame seeds.
  9. Cook everything together for an additional 2–3 minutes.
  10. Add the vegetable mixture to the cooked soba noodles.
  11. Toss thoroughly until well combined and serve.
