  1. Preheat the oven to 400°F and line a baking sheet with foil.
  2. Place the chicken on the prepared baking sheet and season with chili-lime seasoning.
  3. Roast for 15–18 minutes, or until the chicken is cooked through.
  4. Let the chicken rest before slicing.
  5. Meanwhile, cook 1 cup of quinoa with 2 cups of water according to the package directions.
  6. Cook 1 cup of brown rice with 2.5 cups of water according to the package directions.
  7. Allow the quinoa and rice to cool slightly after cooking.
  8. Peel the thick skin from the jicama using a sharp knife.
  9. Slice the jicama into 0.25-inch rounds, then cut into thin matchsticks.
  10. Dice the avocado and prepare lime wedges and hot sauce for serving.
  11. Divide the quinoa, brown rice, jicama, and sliced chicken among serving bowls or meal prep containers.
  12. Top with the corn, pico de gallo, avocado, and chopped cilantro.
  13. Reheat as needed and serve with lime wedges and hot sauce
